After the harvest, the grapes are only destemmed. This is followed by a fermentative skin maceration lasting about twenty days. Alcoholic fermentation is carried out with selected yeasts at a controlled temperature of 28–30 °C. The malolactic fermentation is fully completed.
After this stage, the wine is transferred from stainless steel tanks to French oak barriques and tonneaux, where it ages for 36 months. After bottling, the wine rests for a further 6 months in bottle.

About Tenuta Secolo IX
This wine comes from the Abruzzo region in eastern Italy. About 40 km from the coastal city of Pescara lies the Casauria area. The 20-hectare vineyard of Tenuta Secolo IX is located near the Gran Sasso mountain range and the Majella National Park. In addition to producing high-quality wines, the estate aims to create authentic wines from Abruzzo. Their masterpiece is the sweet Moscato di Castiglione a Casauria. This original variety, dating back to the end of the 17th century, is now cultivated on the estate together with three other indigenous varieties: Montepulciano d’Abruzzo, Trebbiano d’Abruzzo, and Pecorino.
