Lustau's Papirusa is een uiterst verfijnde droge sherry die is gerijpt in het kustplaatsje Sanlúcar de Barrameda. De ligging aan zee zorgt voor een uniek smaakkarakter. Een lichte ziltigheid maakt de wijn mooi en delicaat. Manizanilla Papirusa wordt gemaakt van de palomino fino en is versterkt tot 15,5 % alcohol. De rijping vindt plaats in houten vaten (solera-systeem) waarin zich de befaamde 'flor' ontwikkelt, een grijswitte laag gistcellen. Deze geeft de sherry zijn bijzondere geur en smaak.
