Vinification
The dealcoholization of the wine is carried out under vacuum and at low temperatures. The wine's own aromas that escape during dealcoholization are collected together with the alcohol and thus preserved in the alcohol-free wine. After this process, sugar and CO2 are added, just like sulfites.
