Vinification
The vines have an average age of 40 years. After the best grapes are selected, a cold prefermentary maceration takes place for two to four days. The alcoholic fermentation takes place under an average temperature of 25 ° C. The wine is then left in contact with the skins (cuvaison) for 4 to 5 weeks.

About Ch. Fontarèche
Château Fontareche is one of the oldest domains of the Languedoc (14th century), located in the Aude department, north of Lezignac-Corbières. The domain used to belong to the archbishops of Narbonne and has been owned by the De Lamy family for nine generations (1682). The 150-hectare domain produces Corbières AOC and some Vin de Pays wines. These young winemakers strive for high quality without losing their authenticity. The AOCs only have a yield of 30 to 35 hl per hectare.
