This grape variety gives a light, cherry-like colour. In the nose, first the scent of cherries, then of strawberries and then a spicy scent peculiar to this grape variety. On the palate, fine tannins stimulate the palate. Long finish. A good relationship between the flavour on the palate and the bouquet on the nose! After some evolution, we get forest and mushroom-like aromas and it goes perfectly with feathered game.

Trousseau vines were planted in the communes of Montigny-lès-Arsures on the slopes "Chagnon" and Leuvrin", as well as in Arbois itself in "Montesserin". The vineyards are mainly south-west oriented and contain marl and calcareous clay. After harvesting, the grapes are sorted and macerated for 15 days. This is followed by fermentation with natural yeasts and malolactic fermentation. The wine matures for a further 9 months, half of which is in wood and half in vats.

About Dom. Rolet

The Rolet domain was established in the early 40s by Désiré Rolet. It is the second largest domain in the Jura region. This domain is 60 hectares and consists of three appellations: 36% Arbois, 21% Côtes du Jura and 43% L'étoile that contain five different grape varieties: Chardonnay, Savagnin, Poulsard, Trousseau and Pinot noir. The vineyards of the Jura are on clayey slopes, covered with marl and gravel.
