Vinification
The grapes are picked between 3 a.m. and 10 a.m. so that they do not get a chance to warm up. After a mechanical harvest in the night and early morning, the grapes are separated from leaves and twigs. The grapes are then cooled in temperature-controlled stainless steel tanks. After a gentle pressing of the grapes and débourbage, the alcoholic fermentation of the juice takes place. To increase the balance and complexity of the wine, it ripens sur lie.
