Vinification
Depending on the harvest, a cold fermentation of 4 to 5 days takes place, followed by an alcoholic fermentation of 2 to 3 weeks. The pumping over is done by gravity, which does not stress the yeast and thus guarantees a gentler process. The wine is then aged for 12 to 15 months in new French oak barrels purchased from various tuners.
