Vinification
The grapes are harvested towards the second ten days of October
after a short drying in the plant continued in the fruit cellar in
boxes at controlled temperature and humidity. The resting of
the grapes lasts for 120 days, depending on the season, until the
sugar concentration of the grapes has reached at least 28% - 30%. A soft crushing and destemming takes place from late January
to early March according to the vintages. Slow alcoholic
fermentation in small steel vats with a long maceration of the
skins to allow maximum aromatic and polyphenolic extraction.
Once the malolactic fermentation is over, the wine is aged for at
least 24 months in 20 and 30 hl french oak. Once bottled, it ages
for at least 6 months before being going to market.

Le domaine de Monte del Frà est situé au cœur de la région de Custoza, à l’est du lac de Garde, à 15 km du centre de Vérone. Il a été fondé en 1958 par les frères Eligio et Claudio Bonomo. Aujourd'hui, le domaine couvre environ 100 hectares. Tous les vignobles sont entièrement équipés d'un système d'irrigation, de sorte que les vignes reçoivent les nutriments nécessaires à chaque saison, ce qui constitue une base idéale pour les vins de Monte del Frà.
Grâce au dévouement de la famille Bonomo et à l'attention portée à chaque étape du processus de production, les vins sont devenus très populaires, à la fois en Italie et dans toute l'Europe. Leurs vins ont été sélectionnés sur le marché international comme les plus représentatifs de la région de Vérone.
