Vinification
The grapes come from carefully selected vineyards in Limoux (Languedoc-Roussillon). Grown on clay and limestone soils, they benefit from three distinct climate zones: the cool upper Aude Valley, Atlantic influences, and warmer Mediterranean influences. Upon arrival at the winery, the grapes are immediately pressed and fermented in a traditional manner, followed by clarification at low temperature. The Chardonnay is then aged for six months in oak barrels, resulting in a smooth texture and subtle oak notes.

About Secret Vineyards

In May 2012, four friends were sitting around a table enjoying good food and a few excellent bottles of wine. The evening was brightened by opera, with a performance by the renowned soprano Noémie Schellens. It was that night that the idea for these wines was born. One of the wines was naturally named “Noémie”, as she was the crystal-voiced singer who accompanied and delighted them that evening.
The friends went on to purchase vineyards and have wines made on site, following their own chosen methods. The vineyards are located in the Pyrénées-Orientales department, between the Mediterranean Sea and the mountains of Corbières, Canigou and Albères, as well as in Limoux, Maury and Tautavel.
